Quiet Weekend... Making Plans

Not a lot going on around here... Walking, napping, resting, planning.  As much as we've loved our time in and around Tombstone, now that we've made the decision to leave, our sights have really been set on where we're going.  Another beginning... always exciting.

Because we have to plan and make arrangements for dialysis a few weeks in advance, we really needed to zero in on a certain area around Tulsa to get settled in.  We found ourselves drawn to Bartlesville, which is north of Tulsa about 45 minutes.  Close enough to get into the city for any big procedures, but outside of the hustle and bustle.  And it has its own dialysis center, so it's a good choice.  There are also quite a few houses in the size and price range we're looking at, although trying to find something that is "us", and not your basic cookie cutter 3 bed, 2 bath ranch has been difficult.  We may have found something that is completely perfect though... fingers crossed!

We walked this morning, almost 2-3/4 miles!  We started out on the path we usually walk, but then took a detour down into a dry creek bed and followed it for awhile.  This is what the terrain was like.... and no, we did not go climb the rocks!!  I would have a few weeks ago, though!

We're grilling some burgers for tonight.  I wanted to fix something for a side that wasn't just veggies, but was having trouble coming up with something I could have.  Normally it would be baked beans, or potato salad, or fries or tots or something.  All of those are prohibited now, though.  Well, we could do fries if we had planned ahead... the potatoes have to be started the night before to get rid of the potassium.  And we had no potatoes... and Tombstone has no grocery stores... and we go to Sierra Vista 3 times a week as it is.  So I finally came up with cole slaw, hoping the convenience store carried some in their deli aisle, but no.  Just lots of wraps and burritos.  Finally we came up with a pasta salad.  But I put cole slaw on the shopping list for Brad to pick up tomorrow!!

And the Paprika Mayo, from the recipe Carol sent me yesterday.  Going to try it on the burgers tonight.
(P.S.-  It was yummy on the burgers!  Have some leftover to try on sandwiches tomorrow!)
